So, a friend of ours was having a little shindig at her place this evening and she decided to make it a night of friends and tasty Mexican food. I'm always game for Mexican food :)
Since she had the bulk of the main course covered, I decided to try out this recipe for antojitos (which, translated means appetizer or "little cravers").
Basically, they're little baby tacos. I used my homemade refried beans (done slowcooker style, without the refried) instead of the black beans and left out the green onions, but every thing else was according to the recipe.
Very yummy!
