My most recent experiment comes from this site, written by a friend from college. She's got lots of great suggestions for lots of different things, and one thing she really likes is coconut oil and she has all sorts of wonderful uses for it!
Recently, I've been trying to eat more healthily, but rather than "dieting" I've been focusing on allocation rather than deprivation; letting myself eat fun things, but in moderation (tempered by workouts). So far, it's been working quite well! However, sometimes you just need something sweet. Finding yummy things that aren't completely awful for you is sometimes a challenge, so I was excited to see this recipe for delicious healthy and incredibly simple fudge.
This is practically perfect! Small portions, chocolaty and sweet but rich enough, especially with the little bit of peppermint, to be quite satisfying without needing to eat them all. Definitely hits the spot when you need just a little something sweet. Hooray for coconut oil and the internet!
