Happy National Pierogi Day!

It was brought to my attention this afternoon, via a friend's Facebook comment, that it is National Pierogi Day today! That got me thinking about pierogies and how very yummy they are and, before long, I decided that we must have them for dinner tonight.

Now, not having had planned for this change in the menu, I didn't actually have any pierogies at home. And, after looking up a recipe for pierogies, I realized I didn't have all the ingredients necessary to make them either. However, since I was actually going to be home tonight for a change, I commenced to consider my options:

Long ago, I was informed that the best frozen pierogies are to be found at SuperTarget. However, there are no SuperTargets anywhere near where I live. But there is a little Spanish Market, down the street, where I could pick up the needed ingredients on my way home... So, I decided to take my chances with homemade pierogies.

I stuffed these with garlicy cheesy mashed potatoes mixed with some onion. The innards were really yummy and perfect! However, the dough is a touch chewy... next time I think I'll try to roll the dough a little thinner and make the seams a little smaller. But all in all, they were very nice for the first try!
