Don't be alarmed by the green-ness of this dish.. I promise, there is no spinach involved; only the delightful herbs: Parsley and Basil.Seriously, so much of my cooking is inspired by my desire to re-create dishes that I've seen at restaurants that are no longer easily accessible to me. This is another perfect example of that; in my current neighborhood, there aren't any Noodles and Company's nearby, but I've been wanting some for a while now. At first, I thought I'd just get some pre-made pesto sauce from the store, but my hubby and I have both looked for it, a couple different times, and they don't seem to carry any.
Not one to be deterred by simple lack of convenience, I just turned to the handy-dandy internet and searched out a recipe for pesto sauce and made some myself!
I gathered up the ingredients:
again, i couldn't find fresh basil, so I used fresh parsley and
added dried basil.. it worked pretty well!
Also, I cooked up some chicken for protein:

And what is wrong with spinach?
Heh.. nothing really. In fact, I'm rather a fan, and if certain others in my household weren't so against spinach, I might even consider throwing a little in the mix. But not everyone is as open minded as you and me :)

Hmmm. Perhaps I will give pesto another chance. I tried it at a Victoria's the other day and was MOST uninpressed. But, I'm generally unimpressed with Victoria's, so perhaps I should try some other place. You give me hope.
