A Stuffed Tomato
Ooooooh so tasty!
Hollow out a yummy red ripe tomato, chop a little green (bell) pepper, throw in some diced tomatoes, the chopped up innards, and a little tomato sauce; add a dash of garlic powder, parsley and italian seasonings and some cooked sausage.. stir it all together, mix in some goat cheese; stuff it all inside the tomato and enjoy.
This may be my new favorite treat!

HAHAHA!! Yes. Goat Cheese is good. It adds a little zest and makes the whole mixture creamy. Mmmmmm. You can always do this and leave out the goat cheese... but I wouldn't :)
Have you ever tried goat cheese? It's very similar to cream cheese, just with more flavor and zing.
My next plan (to use up the goat cheese i have) is to make a sort of altered Bruschetta by spreading the goad cheese on toast and topping it with diced tomatotes mixed with garlic and basil and maybe a drop or two of olive oil. Mmmmm.
OK, you're making me drool. A little. Can I come over for lunch? Maybe in about a week and a half... we'll be passing through. You can teach me some taste.
Oh baby! Heck yes you can! (does the day you're coming through happen to land on a weekend?) I'd make these again for sure! I even have most of the ingredients still!
Now, me. Its the tomato I struggle with. But this might actually be good. I'd try it.
Believe me.. it's goooooooood :)
I am coming up in April... I could always whip it up for dinner on the Saturday :)
