Way, way back when, during my high school years, I would often eat a package of top ramen for breakfast; you know, that colorfully packaged stuff that cooks up in two minutes and is full of so much salt and awfulness. Yep, that stuff. My favorite was the blue "Oriental" flavor. (Though now they call it "Soy Sauce" apparently - probably more polite that way anyway).
I actually didn't eat it very often in college, and the one time I tried it again (after a long break from eating it), it did *not* taste the same as I remembered. I could hardly eat it, and after learning about the badness held in that tiny flavor packet, I swore it off for good.
However, the memory of yummy noodley soup has stayed with me. It occurred to me recently, that there are very likely restaurants that sell real ramen soup (because, of course there are).. but as the sole lover-of-soup in my household, I decided that I'd just try my hand at making me some at home.
After an internet search, I settled on this recipe (a blend of quick with real ingredients seemed like just the thing), gathered up my ingredients and got started.
Recently, I was reminded that choppers can do more than just plain chop so, for this soup, I dug out my shredding attachments (for the first time ever) and gave it a go. Woo! Never shredding carrots by hand again (though, note to self, get regular carrots next time rather than baby carrots).
I used beef broth (vs. the chicken broth recommended in the recipe) 'cuz it's what I had on hand.. it made the soup a little darker in color, but it still came out quite well. It made a big ol' pot, which is just perfect. My plan is to freeze most of it to enjoy again later.
I ate some for lunch today and it was tasty! Though I suspect, as with many a soup, it'll taste even better the second day. Hooray for internet recipes!

So it's everything from ramen except the flavor packet? Looks yummy! I sure love my new Cuisinart! Shreds stuff super fast and easy!
It is! It definitely has the flavor I remember, but, you know.. better! Though, next time I'll probably strain out some of the mushrooms before I add the noodles. But, otherwise, I totally recommend it :)
