Making My Own Mexican Yumminess

Before I got married, I lived in this awesome little studio apartment, had a little chest-freezer and ate frozen chimichangas from Sam's Club several times a week. Though I think it's terribly tasty, my Hubby isn't really a fan of Mexican food. Consequently, we don't have it for dinner much at our house. However, this does not mean I don't frequently have it for lunch!

A while back, I discovered this wonderful recipe for homemade refried beans (without the refried). I love it! It does make a lot, but I like to scoop it by 1/2 cup-full into baggies and freeze them. This way I can have bean dip any time the mood hits.

Earlier this week, I came across a delightful recipe for enchiladas. The pictures were so pretty and the recipe sounded so tasty, I couldn't resist making it for lunch today.

Again, the yield was more than I'd eat, myself, in one sitting, so I'll be making space for some more little baggies in my freezer. It was super tasty and I'm excited to have another sort of ready-made yumminess waiting for me in my freezer!

Yum indeed! I should start doing something like this. And, I suspect that whatever you freeze now will be doublly welcome after that babe is born. ;)
