Mini Pies

This year, for Thanksgiving, we drove up to Wisconsin to visit with my family. Driving that far with an infant is a little more exciting than without, but we all made it through ok and we had a great weekend.

One fun thing about Thanksgiving dinner is that everyone who drives in, brings something to contribute, so Mom doesn't have to cook every everything. The distance I travel limits my offerings to stuff that doesn't require refrigeration, so, most often I bring a pie. My Hubby is a great fan of pecan pie, but I'm always too chicken to attempt to bake that flavor myself so, historically, I've gone to the little bakery down the street and ordered one for Thanksgiving.

However, this year, about at the time I would have put in my order, I came across this recipe on a blog that I follow that made pecan pie look easy AND it gave me an opportunity to play with phyllo dough (something I've long thought would be fun to play with, but its unfamiliar-ness and perceived difficulty has always held me back), so I couldn't resist.

Turns out I need not have worried; these mini pecan pies were easy and quite tasty!
