See, I was chatting with my dad about the Christmas traditions his family had while growing up and he was telling me about all the different sorts of delightful cookies Grandma would bake. There was one (which the official name he wasn't sure of, so I've decided to dub them "Chocolate Surprises") where she'd bake some that had a little bit of filling between two balls of cookie dough, essentially creating an overgrown sandwich cookie. Sometimes she'd use dates (to be sort of like Fig Newtons) and sometimes she'd use a bit of chocolate. The surprise part comes in where both the date cookies and the chocolate cookies looked the same, so they were never sure what flavor they'd be getting.
I'm not sure that I've ever had this sort of cookie and, deep down, I'm a bit of a sap when it comes to sentimental family stories, PLUS Christmas is the perfect excuse to try out new cookie recipes, so I thought I'd experiment and see if I could recreate this cookie of Christmases past.
To make them, I figured that Grandma would have used either sugar cookie dough or chocolate chip cookie dough.... since I like chocolate chip cookies better, I decided to make that kind, minus the chocolate chips, and see what sort of results I might get.

Upon trying one, fresh from the oven, my hubby and I decided that these were keepers indeed!

I have a recipe for cookies that are kind of like that. It is a peanut butter cookie that has a bit of peanut butter between two balls of cookie dough and you use a fork to kind of pinch the balls of dough together. This keeps it all contained within the cookie while it is baking and when you bite into it once they are done you have this wonderful, warm creamy peanut butter center. It's quite tasty. Would you like the recipe?
Rits - Here's my Chocolate Surprise recipe:
Ingredients -
3 c flour; 1 tsp baking soda; 1/2 tsp baking powder; 1tsp salt; 3/4 c brown sugar (packed); 3/4 c sugar; 3/4 c butter (softened); 2 eggs; 2 tsp vanilla; package of milk chocolate melting chocolates.
Directions -
preheat oven to 370F. Cream sugars and butter in large bowl until fluffy and light in color, add eggs and vanilla; beat until creamy. Add flour, soda, powder, and salt. Stir until well mixed.
shape dough into 2 small balls, flatten to discs. Put one piece of melting chocolate one disc, place the other disc on top and pinch edges together.
Bake at 370F for 10-12mins

Ok. the recipe is called Double Peanut Butter Cookies. Enjoy!!
Ingredients:
1 1/2 c. sifted flour
1/2 c. sugar
1/2 tsp baking soda
1/4 tsp salt
1/2 c. Crisco
1/2 c creamy peanut butter
1/4 c. light corn syrup
1 TBSP. milk
Directions:
Combine flour, sugar, soda, and salt. Cut in Crisco and peanut butter until mixture resembles coarse meal. Blend in syrup and milk. Shape in roll 2 inches in diameter; chill. Slice 1/8 to 1/4 inch thick. Place half the slices on ungreased cookie sheet; spread each with 1/2 teaspoon peanut butter. Cover with remaining slices; seal edges with fork. Bake at 350F for 12 minutes, or until brown.
